Okay, then take out the cheese in the first sandwich and do an olive paste. That'd be good. You could even just take the tomato with you and cut it up right before you eat it.
I would say do stuff with portabella mushrooms, but I think those are kinda gross when they're cold. If you have access to a microwave, you could sautee or grill or bake some up the night before and put em on sandwhiches with red onions and tomatoes and garlic, etc.
How about soup? I'm much better with soup recipes. If you have a big thermos, that'd be portable.
