You can really do as much or as little as you want as an SAA. I'm one this year, and i don't really ever do anything, and the people in my house hardly ever ask me for advice (though i thought i made sure they all knew they could, but whatever). i had grand plans for doing study breaks, but then i got too lazy to do anything. ummm. yeah. this wasn't helpful, i'm sure.
if you want to do it, do it. if you don't, don't. but it does give you an excuse to come back early and move in. and you get to meet the firsties and transfers, which is nifty.
